Cauliflower takes on so much flavor when you give it a little attention. Here, warm curry spices meet a splash of red wine vinegar for an unexpected brightness. Add roasted red onion and fresh cilantro, and you have a simple side that is oh so delish!
You can make the curry powder yourself using the blend below, or use premade curry powder if that’s what you have. We’re keeping this doable!
Ingredients
For the homemade curry powder:
½ teaspoon cumin seeds
¼ teaspoon fenugreek seeds
¼ teaspoon coriander seeds
¼ teaspoon ground turmeric
¼ teaspoon ground ginger
¼ teaspoon paprika
¼ teaspoon sea salt
For the roasted vegetables:
2 pounds cauliflower florets
1 large red onion, peeled and cut into eighths
½ teaspoon coriander seeds
½ teaspoon cumin seeds
3 tablespoons cooking fat suitable for roasting (avocado oil works great)
3 tablespoons red wine vinegar
1½ teaspoons homemade or premade curry powder
¾ teaspoon salt
1½ teaspoons paprika
Black pepper, to taste
3 tablespoons chopped fresh cilantro
Directions
If making your own Curry Powder: Combine all the curry powder ingredients in a spice grinder and grind into a powder. Measure out 1½ teaspoons for this recipe and save the rest for another meal.
Preheat your oven to 400°F. Place the cauliflower florets in a large bowl. Separate the onion wedges into layers and add them to the bowl.
Place the coriander and cumin seeds in a small, dry skillet over medium heat. Stir frequently until fragrant and slightly darkened, about 5 minutes, watching closely so they don’t burn.
Coarsely crush the toasted seeds with a mortar and pestle.
In a medium bowl, whisk together the crushed seeds, cooking fat, red wine vinegar, curry powder, salt, and paprika. If your cooking fat is solid, melt it first.
Pour the dressing over the vegetables and toss thoroughly to coat. Spread in a single layer on a parchment-lined sheet pan and sprinkle with black pepper. Use two pans if needed to avoid crowding.
Roast for about 35 minutes, stirring occasionally, until the vegetables are tender and golden around the edges.
Transfer to a serving bowl and sprinkle with fresh cilantro. Serve warm or at room temperature.
