Green gazpacho
Gazpacho is a Cold Soup that actually originates from Spain. I have LOVED making many variations over the years. It's traditionally made from a mixture of ingredients like tomato, cucumbers, sweet bell peppers, onions, garlic & olive oil. And of course, just like all home made meals, there's no one right way to make it.
Here is how I make my Green Gazpacho. I think you will love it & hope you make it too!
INGREDIENTS
1 & 1/2 English Cucumbers (I kept half of one to cut up & use to garnish when serving)
2 Yellow Bell Pepper (no seeds)
About 2 cups of Cilantro
An Avocado
1/4 cup Olive oil
Freshly squeezed Lime Juice (I used about 3)
1 tsp of Sea Salt
(I probably would have added in some celery if I would have had some on hand)
DIRECTIONS
Blend all your ingredients of choice together with a cup of water. *keep your ingredients colors similar to make sure you don't get some crazy color combination that may not be appealing
Also, I like my Gazpacho to be smooth & Velvety so I push it through a fine mesh strainer after blending.
Chill in the fridge....& chop up extra veggies, herbs or fruit to garnish with after you pour soup servings in bowls. You can even add little dollops of a sauce you may like & a drizzle of more olive oil. I added a chipotle crema that I made with raw sunflower seeds.
