Turkey Burger patties
INGREDIENTS
1 small onion, small dice
2 Tbs minced ginger
3 cloves garlic, minced
1 1/2 Tbs fish sauce
3 scallions, minced
1/4 c cilantro, minced
1 1/2 lbs ground turkey thigh
3 Tbs arrowroot powder, more as needed
1 Tbs ground flaxseeds
1 tsp salt
1 1/2 Tbs neutral cooking oil (a quality avocado oil is a good choice)
DIRECTIONS
1. Heat oil in a medium pan over medium-low heat. Add onion and sauté until tender and translucent, about 4 minutes. Add ginger and garlic, and cook until fragrant, about 1 minute. Add fish sauce, stir to combine, and remove from heat. Transfer to a large bowl and let cool.
2. Add scallions and cilantro to the bowl with the onion mixture.
3. Crumble raw ground turkey into the bowl with onion mixture and add arrowroot, flaxseeds, and salt. Mix gently to combine. Moisten hands with water, and shape meat mixture into 1/2-inch- thick patties, about 3 inches in diameter.
4. Heat a heavy skillet over medium-high heat and add cooking fat. When fat begins to bubble, add patties and sear until golden brown on each side, turning only once. Do not press.
5. Finish cooking patties by roasting in the oven at 350°F/176°C until cooked through to 165°F internal temperature.
Patties all ready to go! You can keep them warm in the oven on a low setting while you finish prepping the rest of your meal.
Plated on butter lettuce leaves & garnished with beetroot relish, avocado & microgreens!
